Instant Rice Idli Recipe without Fermentation

Ingredients
  

  • 1 cup rice soaked overnight and drained
  • ¼ cup curd yogurt
  • 2 –3 small pieces fresh coconut
  • Little water only as needed for grinding
  • Salt according to taste
  • ¼ teaspoon baking soda
Optional Ghee Tadka
  • 1 teaspoon ghee
  • ½ teaspoon mustard seeds rai
  • Few fresh curry leaves

Method

Soak the Rice
  1. Soak 1 cup of rice overnight or for at least 8 hours. Once soaked, drain all the water completely.
Prepare the Batter
  1. Transfer the soaked rice to a mixer jar.
  2. Add: 1/4 cup curd, 2–3 small pieces of fresh coconut, Salt to taste and a little water.
  3. Grind everything into a smooth batter. The batter should be thick yet pourable.
  4. Once grinded, beat the batter gently for a few seconds. This incorporates a little air, making the final idlis even softer.
  5. Add 1/4 teaspoon baking soda and gently mix until combined.
  6. First lightly grease the idli moulds with a little oil. Then pour the batter into idli mould, filling only about three-fourths full.
  7. Place the idli stand inside a preheated steamer.
  8. Steam for 10–15 minutes on medium heat.
  9. Insert a knife or toothpick into one idli. If it comes out clean, the idlis are perfectly cooked.
Prepare a quick tempering
  1. Heat one teaspoon of ghee, add mustard seeds, curry leaves and let them crackle. Immediately pour this aromatic tadka over the hot idlis.
  2. Serve them with your favourite chutney.

Notes

  • Do not skip soaking the rice.
  • Keep the batter thick but pourable.
  • Steam on medium heat for the best texture.
  • Avoid overmixing after adding baking soda.
  • Freshly steamed idlis always taste the softest.
  • The optional ghee tadka adds excellent flavor but can be skipped if preferred.
