High Protein Mini Moong Dal Pizza

A healthy, cheesy, and protein-rich breakfast made with soaked moong dal instead of refined flour. These mini pizza are soft, fluffy, colorful, and perfect for breakfast, snacks, or lunchboxes.

Ingredients
  

  • 1 cup moong dal soaked for 3–4 hours
  • 1 inch ginger
  • 1 green chilli
  • 1 teaspoon cumin seeds
  • 2 tablespoons water
  • 2 tablespoons chopped carrot
  • 2 tablespoons chopped onion
  • 2 tablespoons chopped capsicum
  • 2 tablespoons chopped coriander leaves
  • ½ teaspoon black pepper
  • ¼ teaspoon turmeric powder
  • Salt to taste
  • Pinch of baking soda
  • Butter for cooking
  • Tomato ketchup
  • Grated cheese
  • Tomato slices
  • Oregano
  • Extra black pepper

Method

  1. Soak moong dal for 3–4 hours.
  2. Grind with ginger, chilli, cumin, and water until smooth.
  3. Continue grinding for 2–3 more minutes.
  4. Mix in vegetables, spices, salt, and baking soda.
  5. Heat a butter-greased pan over low heat.
  6. Pour small portions of batter to form mini pancakes.
  7. Cover and cook for about 2 minutes.
  8. Flip and cook the other side with a little butter.
  9. Spread ketchup over each pancake.
  10. Add cheese, tomato slices, oregano, black pepper, and more cheese.
  11. Cover again until the cheese melts.
  12. Serve hot.

Notes

  • Grind the batter longer for extra fluffiness.
  • Always cook over low heat.
  • Adjust cheese according to your preference
    Prepare the batter in advance and refrigerate it overnight. Add the baking soda just before cooking.
