Mix suji, curd, salt, and water to make a smooth batter. Rest for 10 minutes.
Sauté ginger and garlic in oil until fragrant.
Add all vegetables and seasonings. Cook lightly until slightly soft.
Turn off the heat and mix in ketchup, mayonnaise, and cheese.
Blend the rested batter until smooth.
Mix boiled carrot puree with two ladles of batter and transfer to a piping bag.
Grease a non-stick pan lightly and pipe a carrot spiral.
Pour plain batter over the spiral and spread evenly.
Cook on low heat until the surface dries, then flip and cook for 1–2 minutes.
Place the filling on one side of the sheet and roll tightly.
Repeat with the remaining batter and filling.
Serve hot with chutney, ketchup, or mayonnaise.
