Method
- Wash the poha thoroughly and soak it in a little water.
- Soak the rice overnight or in hot water for one hour.
- Grind the rice, poha, coconut, and one tablespoon of water into a smooth batter.
- Whisk the batter for 1–2 minutes.
- Cover and ferment overnight.
- For an instant version, add Eno just before cooking.
- Heat a lightly greased tawa.
- Pour one ladle of batter and spread into a medium-sized round.
- Cook until the top surface begins to dry.
- Spread tomato ketchup over the surface.
- Add chopped carrot, onion, tomato, oregano, chilli flakes, and grated cheese.
- Fold the pancake into a taco shape.
- Apply a little oil and roast both sides until lightly golden.
- Serve hot with ketchup or green chutney.
Notes
- Natural fermentation gives the best flavor and texture.
- If using Eno, cook the batter immediately after mixing.
- Do not spread the batter too thin like a dosa.
- Cook over medium heat for even browning.
- Add cheese according to your preference.
- Serve immediately for the best cheesy Texture
- leftover batter can be refrigerated for up to 2 days.
Add sweet corn or capsicum for a more authentic pizza flavor.
