Ingredients
  

  • 1 cup thick poha
  • 1 medium potato finely grated
  • 1 teaspoon peri peri seasoning
  • ½ teaspoon black pepper powder
  • ½ teaspoon chilli flakes
  • Salt to taste
  • Cheese slices or mozzarella cheese as needed
  • 2 –3 teaspoons oil for roasting

Method

  1. Wash the poha thoroughly and soak it in a little water for 10 minutes.
  2. Mash the softened poha until smooth.
  3. Squeeze the water from the grated potato and mix it with the poha.
  4. Add peri peri seasoning, black pepper, chilli flakes, and salt.
  5. Mix everything into a soft dough.
  6. Grease your hands and shape small flat patties.
  7. Heat a lightly greased pan and place the patties on it.
  8. Roast on low heat for 1–2 minutes on each side, flipping several times until golden.
  9. Place cheese on one patty and sprinkle black pepper.
  10. Cover with another patty to make a sandwich.
  11. Cook for another 20–30 seconds until the cheese melts.
  12. Serve hot with your favorite dipping sauce.

Notes

  • Thick poha gives the best texture.
  • Always remove excess water from the grated potato.
  • Cook on low heat for evenly crispy patties.
  • Don't overcrowd the pan.
  • Cheese is optional but highly recommended for a delicious cheese pull.
  • Serve immediately for the crispiest texture.
