Ingredients

  • 2 cups whole wheat flour
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • 1 teaspoon sugar
  • ½ teaspoon salt
  • 1 teaspoon lemon juice
  • 1 glass milk added gradually as needed
  • 1 teaspoon oil only if the dough feels sticky
For the topping:
  • 2 tablespoons butter
  • 1 tablespoon finely chopped fresh coriander
  • ½ teaspoon chilli flakes or according to taste

Method

  1. Add wheat flour, baking powder, baking soda, sugar, salt and lemon juice to a large bowl. Mix well.
  2. Gradually add milk and bring the mixture together into a very soft dough.
  3. If the dough feels sticky, add 1 teaspoon oil and knead again.
  4. Knead the dough well for 5–10 minutes until smooth, soft and stretchy.
  5. Divide the dough into approximately 12 small portions and shape each into a smooth ball.
  6. Cover the dough balls with a clean cloth.
  7. Dust the work surface lightly with dry flour and roll each ball into a thick roti.
  8. Heat a tawa and cook the naan over low heat, flipping once the first side is cooked.
  9. Continue cooking until the naan puffs and develops light cooked spots.
  10. Mix butter with chopped coriander and chilli flakes and brush it over the hot naan.
  11. Repeat with the remaining dough and serve warm with chutney or sauce.

Notes

  • The dough should be soft and pliable, not firm.
  • Add milk gradually because the exact amount needed can vary.
  • Kneading for 5–10 minutes is important for the soft texture.
  • Keep the dough balls covered so they do not develop a dry outer layer.
  • Roll the naan thick enough to puff but not excessively thick.
  • Adjust or skip chilli flakes according to your family's preference.
  • Serve fresh for the softest texture.
