About This Recipe
This besan bread recipe is a fun way to turn simple bread slices into something much more interesting. A thick mixture of besan, vegetables and Indian spices is spread generously over the bread. Sesame seeds are sprinkled on top before the bread is cooked on a pan.
The bread is first cooked with the besan-coated side facing down. More mixture is then spread over the other side, so the bread becomes completely covered with the flavorful besan mixture.
The result is golden on the outside, soft and savory inside, with little bits of vegetables throughout. Pav bhaji masala gives it an especially delicious Indian-style flavor without requiring many additional spices.
It works particularly well as an instant breakfast, evening snack or kids’ tiffin recipe when you want something different from regular bread toast.

Key Ingredients
Besan
Besan, or gram flour, forms the main coating for this recipe. It creates a flavorful outer layer around the bread and helps the vegetables and spices stick to the slices.
Mixed Vegetables
Carrot, capsicum, tomato and onion add texture, color and flavor. Chop them finely so they mix evenly into the besan and cook properly.
Pav Bhaji Masala
A little pav bhaji masala gives the besan mixture a deeper, more flavorful taste. It also makes the recipe taste different from an ordinary besan chilla.
Baking Soda and Lemon Juice
Since this is designed as an instant breakfast recipe, a small amount of baking soda is added along with lemon juice. This helps give the mixture a lighter texture without requiring a long resting time.

How to make Besan Bread Recipe with Step-by-step Photos
1. Prepare the Besan Mixture
Take 1 cup besan in a mixing bowl and sieve it first. This simple step helps remove lumps and gives you a smoother mixture.
2. Add Capsicum, Carrot, Tomato, Onion, Green chilli, Fresh coriander, Turmeric powder, Red chilli powder, Coriander powder, Pav bhaji masala, Salt.
3. Start adding water little by little while mixing continuously. Do not add all the water at once. The vegetables will also release some moisture as the mixture sits.
4. The mixture should be thick enough to spread over bread. It should not be runny like a thin pakora batter.
5. Add 2 pinches of baking soda followed by lemon juice.
6. Mix gently until everything is combined. If you have enough time to let the mixture rest for around 5–10 minutes, baking soda is not necessary.
7. Take a bread slice and spread the prepared besan mixture evenly over one side.
8. Sprinkle some sesame seeds over the top.
9. Heat a pan and add 1 teaspoon oil.
10. Place the bread on the pan with the besan-coated side facing down.
11. Now spread the besan mixture over the other side of the bread as well. This way, both sides of the bread will be covered with the vegetable besan mixture.
12. Sprinkle sesame seeds over the second side too.
13. Cover the pan and cook for about 5 minutes.
14. After 5 minutes, drizzle a little oil over the top and carefully flip the bread. Cook the other side for around 2–3 minutes.
15. Once the bread is golden and cooked through, remove it from the pan.
16. Cut each piece into two portions and serve besan bread hot with your favorite chutney or sauce.
