About This Recipe
This Aloo Poha Recipe starts with an interesting technique. Instead of soaking the poha, the poha is first ground into a fine powder. Water is then added gradually to form a dough. After a short 10-minute resting period, boiled grated potatoes, herbs, spices and lemon juice are mixed into the dough.
The dough is then rolled between sheets into a rectangle, sprinkled with sesame seeds and cut into small square pieces. These pieces are cooked on a greased pan until both sides become nicely roasted and crispy.
The result is a delicious combination of crunchy outside and soft, flavorful inside. Sesame seeds add a lovely nutty touch and make the little squares even more tempting.
This is especially useful when you want something different from the usual poha, paratha or roti for breakfast. Children can also enjoy these as a finger-friendly tiffin snack.

Key Ingredients
Poha
Poha, also known as flattened rice, is the main ingredient. Grinding it into a fine powder allows it to combine with water and form a workable dough rather than a traditional poha mixture.
Boiled Potatoes
Grated boiled potatoes help bind the dough and give the snack a soft, satisfying texture inside. They also make the pieces easier to shape and roll.
Peri Peri Masala
Peri peri masala gives the recipe a spicy, tangy and slightly smoky flavor. It is one of the ingredients that makes this snack taste different from a regular potato snack.
Garam Masala and Other Spices
Garam masala, turmeric and red chilli powder provide warmth, color and flavor without requiring a long list of ingredients.

How to make Aloo Poha Recipe with Step-by-step Photos
1.Take 2 cups of poha and transfer it to a mixer grinder. Grind until it becomes a fine powder.
2. The poha should be ground very finely because this makes the dough smoother and easier to shape.
3. Transfer the powdered poha to a bowl.
4. Start adding water gradually. Add 1 cup of water first, mix well, and then add another ¼ cup of water. Do not add all the water at once. Poha absorbs quite a lot of water, and the goal is to make a dough, not a batter.
5. Cover the mixture and let it rest for 10 minutes.
6. After 10 minutes, the poha will have absorbed the water and the mixture will have risen slightly.
7. Add: 2 boiled potatoes, grated, 1 green chilli, 1-inch ginger, Chopped coriander leaves, Peri peri masala, Garam masala, Turmeric powder, Red chilli powder, Salt
Lemon juice
8. Mix everything thoroughly.
9. Divide the prepared dough into two equal portions.
10. Take one portion and keep the other covered so that it doesn’t dry out.
11. Place a sheet on your work surface and lightly grease it with oil.
12. Put one portion of dough on the sheet and gently press it with your palm.
13. Sprinkle sesame seeds over the dough. Place another sheet on top and start rolling.
14. Roll it into a reasonably even rectangle shape.
15. Trim the uneven edges with a knife. This gives you a neat rectangular sheet and makes the pieces more uniform.
16. Cut the sheet into small square pieces. Around 6 squares can be made from one portion, depending on the size.
17. Heat a pan over medium heat and lightly grease it with oil.
18. Place the prepared squares on the pan and roast for about 2–3 minutes flipping on both sides.
19. Once the pieces are nicely roasted and crispy on both sides, transfer them to a serving plate. Serve Aloo Poha hot with tomato sauce, green chutney or any dip of your choice.
Expert Tips
✔️Grind the poha as finely as possible for a smoother dough.
✔️Add water gradually because poha absorbs water quickly.
✔️Keep the second portion of dough covered while working with the first.
✔️Don’t roll the dough extremely thin, moderate thickness gives a better texture.
✔️Roast on medium heat so the inside cooks while the outside becomes crisp.
Avoid overcrowding the pan.
✔️For the best crunch, roast both sides properly instead of removing them too early.
Serving Suggestions
Serve these crispy Aloo Poha squares hot with green chutney, tomato sauce, coriander chutney or your favorite dip.
They make a lovely breakfast with tea or a simple side of curd. For children’s lunchboxes, allow the pieces to cool slightly before packing them so that excess steam doesn’t make them soggy.
